Happy Thanksgiving!
INGREDIENTS:
4 sweet potatoes, peeled and cubed1/4 cup heavy cream
1/2 tablespoon fresh ginger, grated
1 tablespoon pure maple syrup
1/2 teaspoon fine-grain sea salt
1/2 teaspoon ground nutmeg
PREPARATION:
Put sweet potatoes in a large pot and cover with water. Bring to a boil and cook for 20-25 minutes until tender. Drain sweet potatoes; add heavy cream, ginger, maple syrup, sea salt, and nutmeg. Mash until smooth.Spoon the sweet potato mixture into a baking dish, bake uncovered at 350-degrees until warm, roughly 30 - 40 minutes.
Serves 6.
